Today is a slow day so I am taking time off from the deli to write a blog! When I was younger, I noticed how much I liked to cook…so I took up the hobbie and now like to experiment on new and different dishes; however, there is one cookie recipe that I have been making for a long time now. I keep making these cookies over and over because they are so easy and fast! I thought I should share it..
Cookie Strips
1/2 c. oil
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
1 1/2 c. + 2 tbs. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. chocolate chips
In a mixing bowl combine oil, sugars, egg, and vanilla. Mix well. Combine flour, baking soda, and salt. Gradually add to sugar mixure. Divide dough in half. On greased baking sheet, shape each portion into 15″ by 3″ rectangle. Sprinkle chocolate chips over dough. Press lightly. Bake at 375 degrees for 6-7 minutes, or 8-9 minutes for crispier cookies. Cool 5 minutes. Cut with serrated knife into 1″ strips. Cool on wire rack. Pizza cutter works well to cut with. Yield: about 3 dozen
